Watermelon ‘Nice Cream'

What you need

Ingredients

500g seedless watermelon
1 medium banana
200g plain full fat coconut yogurt (dairy free)

Method

Cut the watermelon flesh into chunks and discard the rind. If seedless watermelon is unavailable, be sure to remove and discard any seeds too. Peel the banana and cut into bite-sized slices.

Scatter the watermelon and banana pieces in one layer on a lined tray or plate, then freeze for at least 2 hours or until frozen solid.

Add the coconut yogurt to a food processor or blender. Add the frozen watermelon and banana pieces, then blend until smooth and creamy.

Serve a portion into your baby’s favourite bowl and enjoy!

Pour leftover nice-cream into an airtight container and store in the freezer for up to 3 months. When serving straight from the freezer, let the nice-cream sit at room temperature for a few minutes to soften again before serving.

It may take a few minutes for the frozen fruit to blend to a smooth consistency but persevere and it will get there eventually! If your blender or food processor starts getting hot, give it a short break to allow the engine to cool down to avoid overheating.
