100g oats
2 large eggs
75g full fat natural yogurt
1 fresh ripe peach

Method
Preheat oven to 200°C (180°C with fan) gas mark 6. Peel and stone the peach, then chop into small pieces.
Measure the oats into a food processor or blender, then crack in the eggs and add the yogurt and peach pieces. Blend until smooth.
Pour the mixture into a small, lined oven safe dish, then bake for 20-25 minutes until golden brown.
Remove from the oven and leave to cool, then cut into fingers to serve.
Tinned or frozen fruit can be used in this recipe as a cheaper alternative to fresh – just defrost frozen fruit before using as before. Try this recipe with other fruits too – fresh berries work well!
